This has to be one of my favorite cookie recipes that I have created!! They taste so buttery even though there’s no butter in them, they are made with virgin coconut oil and melt in your mouth. Recipe: Cashew Coconut Cookies
Ingredients
- 1 1/2 cups raw cashews
- 1 cup unsweetened shredded coconut
- 1/3 – 1/2 cup granulated sweetener*
- 1/4 tsp vanilla beans, about 2 beans
- 1/4 tsp baking soda
- 1/4 tsp sea salt, just shy of
- 1/4 cup virgin coconut oil, melted
- 2 tbsp full fat coconut milk
Instructions
- Place the cashews and coconut in a food processor and pulse until a coarse sand texture is created
- Add the sweetener, vanilla beans, salt and soda and pulse until combined
- Add in the oil and coconut milk and pulse again to form a dough
- Using a cookie scoop or spoon, place balls of dough on a parchment cookie sheet and press down slightly on each dough ball. They will spread more in the oven
- Place an additional cookie sheet under the other sheet to prevent the bottoms of the cookies from browning too much
- Bake at 350 for 8-10 minutes, until slightly brown
- Remove from the oven and let the cookies sit on the cookie sheet for 5 minutes to set then place them on a cooling rack to get crisp
- Store in an airtight container

*I used about 1/2 cup of Swerve and a tablespoon of coconut palm sugar to make these low in sugar.

I would make paleo pumpkin pancakes every weekend.
I just learned a fun trick (as I am newly pregnant and learning about all of the wonderful benefits of coconut oil in pregnancy and for baby) which is to mix raw cocoa powder with coconut oil to create this luscious chocolate spread for toast, crumpets, or crackers. A fantastic way to reap all of the benefits from coconut oil, get antioxidants from raw cocoa and is an easy something to curb my sweet tooth. I’ll be making coconut oil chocolate spread (Nutella BEWARE!!).

I love coconut oil and so does my dog. I feed it to her every day and it helps her coat stay nice and shiny. I used it on my face, arms and legs as a great moisturizer. I also use it to make toothpaste and oil pulling. I use it to cook and bake with. No more vegetable oil for me. I love the way it taste and the healthy way it makes me feel. I think any nut will work. Cashews tend to be a bit sweet and pair with coconut so well. Try it and let me know what you think! You have to try cashews at some point too because these are soooo good!!

I have all of her friends and coaches hooked on these healthy gems. I grind nuts, dried fruit, cocoa and coconut oil to make them. Delicious!
I would use the coconut oil for chocolate coconut tarts. That would be amazing. Maybe even to make paleo almond butter cups. I love the idea to make a chocolate spread.

Am a subscriber and I would use (have used) this to make the most amazing whole wheat coconut cookies.
But get this…I hate coconut! I hate the nasty coconut flavor in certain candy bars that use it as an “additional ingredient”.
But what I do NOT hate is the subtle flavor that this product adds to cookies. It’s light, it’s just a hint and I’m thrilled to find a coconut oil that doesn’t scream – but instead, whispers – coconut.

I’m a subscriber and love to make pie crust with coconut oil.
A better question is what I won’t use it for! I use coconut oil as conditioner for my hair, I make toothpaste from it, make lip balm, and body moisturizer.
I cook all my vegetables, make chocolate, and sometimes just eat it straight, as I’ve heard that it’s supposed to be good for digestion.

These really are fantastic. I used about 1/4 cup Stevia. The recipe only made about 18 cookies, so make a double batch!
